LAFA
The lafa is an Iraqi pita. The word "lafa" comes from the Arabic language and means to spin, to roll.
הַלָּאפָה הִיא פִּיתָּה עִירָאקִית.
הַמִּל ָּה לָאפָה בָּאָה מֵהַשָּׂפָה הָעַרְבִית וּפֵרוּשָׁהּ לְסוֹבֵב, לְגַלְגֵּל.
The lafa is different from the regular pita. It is flat, round, and large, and does not have a pocket like a regular pita.
הַלָּאפָה שׁוֹנָה מֵהַפִּיתָּה הָרְגִילָה. הִיא שְׁטוּחָה, עֲגוּלָּה וּגְדוֹלָה וְאֵין לָהּ כִּיס כְּמוֹ לְפִיתָּה רְגִילָה.
So you can't put things inside the lafa as you do with the regular pita, but you can place whatever you want in the center of the lafa and then roll it up.
אָז אִי אֶפְשָׁר לְהַכְנִיס בְּתוֹךְ הַלָּאפָה כָּל מִינֵי דְּבָרִים כְּמוֹ שֶׁמַּכְנִיסִים בַּפִּיתָּה הָרְגִילָה, אֲבָל אֶפְשָׁר לָשִׂים אֶת מָה שֶׁרוֹצִים בְּמֶרְכַּז הַלָּאפָה וְלִסְגּוֹר אוֹתָהּ בְּגִלְגּוּל.
Many people like to eat shawarma in a lafa. They get a portion of meat and add hummus, spicy sauce, and salads, and everything is placed in the center of the lafa, then they roll it up and close it.
הַרְבֵּה אֲנָשִׁים אוֹהֲבִים לֶאֱכוֹל שָׁוַארְמָה בְּלָאפָה. אָז הֵם מְקַבְּלִים מָנָה שֶׁל בָּשָׂר וּמוֹסִיפִים, חוּמוּס, חָרִיף וְסָלָטִים וְהַכֹּל מוּנָּח בְּמֶּרְכַּז הַלָּאפָה וְאָז מְגַלְגְּלִים אוֹתָהּ וְסוֹגְרִים.

הִנֵּה כַּמָּה מִשְׁפָּטִים עִם הַמִּילָּה לָאפָה:
1. The ingredients of the lafa are flour and water only (you can add a bit of salt), and it is baked in a taboon, at high heat, and open flame.

2. מִי שֶׁמֵּכִין אֶת מְנַת הַשָּׁוַארְמָה בְּלָאפָה, פּוֹרֵס אֶת הַלָּאפָה עַל הַשּׁוּלְחָן, מוֹרֵחַ עָלֶיהָ חוּמוּס וְחָרִיף, מוֹסִיף אֶת הַסָּלָטִים שֶׁאֲנַחְנוּ רוֹצִים, מַנִּיחַ בָּאֶמְצַע מָנָה שֶׁל בָּשָׂר, מְגַלְגֵּל אֶת הַלָּאפָה וּמְקַפֵּל אֶת הַקָּצֶה הַתַּחְתּוֹן.
